Not only do they taste great, but the smell of these oat biscuits is utterly amazing too! They’re flavoured with cinnamon and have a light caramel taste from the golden syrup.

Oat biscuits are also called oaty cookies or even oatmeal biscuits, different names, but really it’s the same recipe and the same amazing taste. They’re a must-have for tea parties, lunch boxes or even for breakfast.

Oat Biscuit Recipe Ingredients

Below are the few ingredients needed for this recipe:

  • Porridge Oats: I like to use Quaker Porridge Oats, but any brand is fine to use.
  • Self-Raising Flour: Use self-raising flour.
  • Light Brown Sugar: You can use light brown sugar; dark brown sugar is a good alternative. If you only have caster sugar, then you can use that too.
  • Bicarbonate Of Soda: This helps the biscuits to spread out slightly whilst baking in the oven.
  • Golden Syrup: You can use either golden syrup or honey. Check out this list of golden syrup alternatives.
  • Margarine or Butter: You can use either salted or unsalted butter. I used Stork which has salt in it.
  • Cinnamon (Optional): Adding cinnamon is optional, but it does take these biscuits to a whole new level!

How To Make Homemade Oaty Biscuits With Porridge Oats

Below is a step-by-step guide on how to make homemade Hobnobs with this oat biscuit recipe. Full recipe instructions are on the recipe card:

Step One:

Preheat your oven to 180°C (160°C Fan, gas mark 4) and line two medium baking trays with parchment paper. If you have a large baking tray, then you just need one.

Add butter, golden syrup and light brown sugar to a large mixing bowl and melt in the microwave on a medium heat.

Check every 10 to 15 seconds and give the mixture a stir. Repeat until the mixture has melted.

Add self-raising flour, porridge oats, bicarbonate of soda and cinnamon to the melted butter mixture and mix together until thoroughly combined.

Step Three:

Scoop a tablespoon of dough and roll it into a ball using the palms of your hands. Place the ball onto the lined baking tray. Repeat this step for the remaining dough; leave a gap between each ball.

Gently press the dough with your fingers to flatten it slightly.

TIP:When rolling the dough, it may take a while for the dough to come together but it will eventually.

Bake in the oven for 10 to 15 minutes or until golden brown. Leave the biscuits to cool down for 5 minutes before removing them from the baking tray.

My Top Tips

Fatten the dough balls before baking it in the oven, this will help the biscuits spread out whilst baking. Gently press the dough balls down, if you press too hard, then the biscuits will turn out thin and crispy.

If the oat biscuits haven’t flattened out whilst baking in the oven, carefully pat the biscuits down whilst they are cooling. Careful, they will be hot!

The longer you bake these oatie biscuits the crunchier they’ll be. For softer biscuits, bake for 7 to 10 minutes or bake for 15 to 20 minutes for crunchy oat biscuits. At 15 minutes, the texture will be crunchy around the edges and chewy in the middle.

These oat biscuits are generally healthier than standard biscuits as they have oats in them. For healthier oat biscuits, you can reduce the amount of sugar in this recipe.

There are so many extra flavours you can add to this oat biscuits recipe, I’ve listed my top two favourites below:

Ginger Oat Biscuits: You can add small chunks of stem ginger to this recipe or add a teaspoon of ground ginger powder. This taste is INSANE, it reminds me of my ginger nut biscuits and my gingerbread NYC cookies.

Chocolate Oat Biscuits: You can drizzle melted chocolate over the biscuits or dip them into melted chocolate. Leave the biscuits to cool before coating it with chocolate. You could also add chocolate chips to the biscuit dough.

How To Store

Keep the biscuits in an airtight container at room temperature and eat within 3 days.

You can freeze the dough in advance and make it when you are ready! They last for up to a month in the freezer. You can freeze the dough in ball shapes and bake straight from frozen, add an extra 5 to 10 minutes to the baking time.
